Despite Covid-19 restrictions and social distancing, on Tuesday the catering team held a Caribbean lunch for all the pupils and staff. 

Our head chef Richard compiled a fabulous menu and with the help of sous chef Curtis, cooked an amazing lunch for everyone.

The main course consisted of Bajan lamb (a mild dish of tender lamb lightly flavoured with Tabasco and chillies) and Barbadian chicken with coconut and citrus – flavoursome with fresh lemons, limes and creamy coconut. I think this was the hit of the day because we had so many compliments from staff and pupils.

For the vegetarians and vegans Richard prepared some Jamaican patties, which looked a bit like a Cornish Pasty, and there was also Jamaican Jerk Rasta Pasta. To finish the meal Curtis baked a scrumptious tropical coconut and lime cheesecake which would enhance any lunch or dinner party – a real treat.

When we come back after the half term break we can all look forward to an Indian feast, which is always one of our most popular theme days.
