On Wednesday we celebrated the Mexican festival of ‘The Day of the Dead’ with a wonderful Mexican lunch in the Refectory and Buttery. The dining areas were decorated with traditional highly decorated skull emblems and our fabulous chefs cooked up some delicious treats which included Carnitas – Pulled pork flavoured with chipotle and guajillo chillies in a soft tortilla wrap, Polo con pimientos estilo mexicano – warm and spicy Mexican style chicken with peppers, Empanadillos de frijoles negros – Spicy black bean empanadas, and Quesadilla – layers of beans in tomato sauce with soft tortillas and topped with a creamy cheese sauce. We served guacamole and tomato salsa with tortilla chips on the side and for dessert a traditional Mexican cake called Pastel de tres leches.
One of the staff, who had lived in Mexico for many years, said that the food tasted delicious and was authentically Mexican in flavour. I also received some emails from our students who said they thoroughly enjoyed the lunch.
Our next special lunch on Thursday 17th November is going to have a musical theme, so I hope you will all enjoy that!
